It's sort of difficult to predict how your specific food will perform but hopefully I can provide some helpful info here:
The transport boxes are designed to hold a steam table tray / aluminum catering grays - or could be used for non-greasy / cold food (bagels, sandwiches). We don't recommend direct contact for fried foods (or high moisture foods like lasagna or pasta) without a barrier (like a catering tray).
We do know that trapped steam and moisture is what causes fried food to lose crispiness and become soggy, and there is a little bit additional airflow if you left a catering tray uncovered inside the box vs the standard catering tray lid - but it's hard to say if it's enough airflow for the amount of time you're transporting the food.
